Avocado Mango Chicken Salad with Guacamole
The creamy avocados and mango in this salad go well with the grilled chicken and the sour Guacamole dressing. The flavors go well together, making it a healthy and filling meal.
Ingredients:
- 2 ripe avocados
- 1 ripe mango
- 2 boneless, skinless chicken breasts
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved
- 2 cups mixed greens
- 1/4 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
Instructions:
Season chicken breasts with salt, pepper, and a squeeze of lime juice
Grill or cook chicken until fully cooked, then let it rest for a few minutes before slicing
Peel and dice the avocados and mango
Place them in a bowl
Add chopped red onion, cilantro, cherry tomatoes, and sliced chicken to the bowl
In a separate bowl, mix Greek yogurt, mayonnaise, cumin, garlic powder, cayenne pepper, and lime juice to create the Guacamole dressing
Pour the dressing over the salad ingredients and toss gently to combine
Serve the salad on a bed of mixed greens
Garnish with additional cilantro and lime wedges if desired
