Dragonfly Cake Cupcakes



Fun and tasty, these Dragonfly Cake Cupcakes are a delicious treat. They look great on dessert tables at birthday parties, garden parties, or any other time you want to add a little magic.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • Green food coloring
  • 24 dragonfly cake toppers optional
  • Buttercream frosting store-bought or homemade
  • Decorative sprinkles optional

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Sift the cocoa powder, baking powder, baking soda, and salt together in a medium-sized bowl

Spread the softened butter and sugar out in a large bowl

Mix them together until they are light and fluffy

Adding the eggs one at a time and mixing them in is the next step

Mix the dry ingredients with the wet ones in three parts, adding the buttermilk between each one

Mix the dry ingredients in at the beginning and end, until they are just combined

To get the color you want for your dragonfly cupcake batter, add green food coloring

Fill each cupcake liner about two thirds of the way to the top with batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool for 10 minutes in the muffin tin

Then, move them to a wire rack to cool all the way down

After the cupcakes are completely cool, frost them with buttercream icing and, if you want, decorate them with dragonfly cake toppers and fun sprinkles
